Creamy Swedish Meatballs (4 Net Grams)

The first time I ever had Swedish Meatballs was way back when I was a very young single guy living in the big city. It was something made for quick and easy preparation by the folks down at Stouffer. I have always liked Stouffer’s products because quite frankly they were always consistent and more importantly pretty darn good. All you needed was a microwave oven and you were good to go. Best Ever Chicken Scallopini (3 Net Grams)

Image: Chicken Scallopini

I have been making Chicken Scallopini for as long as I can remember. Some of you may well wonder what the heck is Chicken Scallopini? It’s just a fancy name for chicken cutlets that are usually pounded out very thin so that they cook very quickly. It is Italian in origin and is traditionally served with pasta. I serve it with a salad or with a vegetable on the side and truth be told, I don’t miss the pasta at all. Continue Reading

Autumn has always been my favorite time of year. Namely because of all the holiday treats one has to look forward to as summertime melts seamlessly into autumn. One favorite that instantly came to mind was Libby’s Pumpkin Roll. It has been a holiday staple of my mother’s for decades. These pumpkin coconut muffins came to be because I was challenged by a friend to come up with something that used pumpkin in it. This is a deliciously different take on the Libby’s pumpkin roll recipe that is equally as good and one thats loaded with pumpkin pie flavor. Continue Reading

The Pumpkin Challenge. I was recently contacted by a good friend who also observes a low carb lifestyle. Her request or rather her challenge was to create something with pumpkin in it. There were no specific parameters given, just make it  something simple that would get her through the quickly approaching holiday season. This was created as an optional frosting for a soon to follow pumpkin coconut muffin recipe. The really good news though, is that it doubles as a dessert option on its own. Continue Reading

Almonds – They do a body good. I love almonds because as a snack they are a nutrient dense power house of goodness. Good for me, good for my body. Peanut Sauce Revisited. I have to admit that I am coo coo for Coco Puffs crazy when it comes to Thai peanut sauce. My first experience tasting this venerable sauce was at an Asian concept I managed in Los Angeles called Monsoon Cafe. I am not exaggerating when I say I loved this stuff so much that I could have drank it up by the cupful. No joke, it was that good! Continue Reading

Dijon mustard is one of those condiments I have always had on hand, but never knew what to do with. This is a classic addition in many French inspired dishes. Here it provides that game changing element of complexity and surprise I have come to rely on to elevate the flavor profile of a sauce or salad dressing. Continue Reading

Thanksgiving  always elicits visions of green beans casserole dancing inside my head. Nothing was as comforting as a huge helping of this delicious casserole. Since its introduction it’s still considered a holiday comfort classic.  Today it remains as one of those iconic dishes one sees again and again at holiday gatherings around the country. Gourmet Salted Caramel Sauce (0 Net Grams)

Image: Salted Caramel Sauce

A Caramel Sauce Disappointment. To begin with I wanted a caramel sauce to compliment my Caramel Brownie Mugcake. Previously I had been using Walden Farms Sugar-Free Caramel Sauce. Truth be told though, like so many of their products it is just ho hum. It can be described as having a somewhat runny consistency. The taste is at best satisfactory and somewhat artificial tasting, but with no other alternatives, it temporarily filled the void. Continue Reading
