The first time I indulged in that wonderful little dessert known as Tiramisu was at a little cafe in Rome. I savored every delicious bite as I sipped on an espresso laced with lemon peel quietly taking in all the hustle and bustle that is Rome. It was love at first bite. The creamy marscapone, the marsala wine and espresso soaked lady fingers covered with all that chocolate dust. It just sent my head into a tail spin. A close friend said that these chocolate chip wonders which I referred to as muffins, are more of a cupcake. Why? Because I frosted them. All I know is that they are moist, delicious and loaded with goodness you’re going to love. In the base I use a combination of almond and coconut flours, as well as unsweetened flaked coconut which gives these goodies a texture very similar to one made with gluten. Getting something that resembles and tastes just as good as gluten is not an easy task. Often times  it requires trial and error and these were no exception. Here in New Mexico we take our green chile seriously. Every year as autumn approaches the smell of green chile being roasted wafts through the air. Every grocer or farmers market offers to fire roast your purchase to blistered perfection before you take it home to store for the winter. As a kid we had chile, mostly red, with every meal. Green chile was something that was only prepared occasionally and something to look forward to when you smelled it cooking on the stove.
