Dijon mustard is one of those condiments I have always had on hand, but never knew what to do with. This is a classic addition in many French inspired dishes. Here it provides that game changing element of complexity and surprise I have come to rely on to elevate the flavor profile of a sauce or salad dressing. Continue Reading

Thanksgiving  always elicits visions of green beans casserole dancing inside my head. Nothing was as comforting as a huge helping of this delicious casserole. It’s a holiday dish that most everyone has had at one time or another. Since its introduction it’s still considered a holiday comfort classic.  Today it remains as one of those iconic dishes one sees again and again at holiday gatherings around the country. Gourmet Salted Caramel Sauce (0 Net Grams)

A Caramel Sauce Disappointment. To begin with I wanted a caramel sauce to compliment my Caramel Brownie Mugcake. Previously I had been using Walden Farms Sugar-Free Caramel Sauce. Truth be told though, like so many of their products it is just ho hum. It can be described as having a somewhat runny consistency. The taste is at best satisfactory and somewhat artificial tasting, but with no other alternatives, it temporarily filled the void. Continue Reading

Tiramisu Blues. There was a time when I wore blinders and surpassed the bakery section of Whole Foods. Why? Because they have a Tiramisu that was my go to dessert for years. I stopped that urge to indulge in its tracks by coming up with an easy Tiramisu mousse recipe. The mousse by itself has all those delicious flavors I was looking to quash that craving for good! The problem though, was that I still missed those espresso/marsala soaked lady fingers that are an integral component of this classic dessert. Continue Reading

An Apple, My New Banana. Much like the discovery I made using that single banana I applied this same principle to an apple. An apple by itself, just like a banana is very high in carbs. Again though when you divide that apple over 12 individual servings you have a muffin that comes in at 3 net grams per serving. Yup, that’s what I’m talking about, that’s low carb math done Mike’s way. Continue Reading

Classic Peanut Butter Cookies (1 Net Gram)

Its hard to remember when I first fell in love with peanut butter cookies. What I do recall is that peanut butter cookies have always been among those things I would get excited about when I saw them at local bake sales. Back in those days this was a very popular way to raise funds for various school sponsored clubs and organizations. These bake sales were the ones always setup in front of  supermarkets and discount stores like K-mart. Fiery New Mexico Chile Con Carne (6 Net Grams)

Here in New Mexico we take our chile seriously. Whether red is your preference or if you like the heat and fire roasted flavor associated with using green. Here chile is not just chili. For one the spelling with an i at the end denotes that it is a Texas style chili and that it will have more sweetness than heat. It typically relies on a variety of spices including red chile powder and sugar to give it it’s flavor. In New Mexico, both red and green, is all about the heat. The very best heat is grown in Hatch, New Mexico. Continue Reading
