An Apple, My New Banana. Much like the discovery I made using that single banana I applied this same principle to an apple. An apple by itself, just like a banana is very high in carbs. My childhood in New Mexico is filled with memories of waking up to smell of coffee brewing and fresh flour tortillas cooking on the stove top at my grandmothers house. One of my favorite things to eat that she constantly prepared were papitas. This is a very humble dish made by slow cooking finely diced potatoes, bacon and a little yellow onion. One of my all time favorite sweets has always been banana nut muffins. The idea that a gluten-free, low glycemic alternative could be just as good was just not a foreseeable reality. Nothing makes me happier than a really well made hollandaise Sauce. It has that buttery lemon finish that just glides across your tongue. It’s one of those classic French sauces that makes you close your eyes so that you savor and relish each delicious mouthful. The first time I encountered this noble sauce was at a little French bistro in Los Angeles. I had gone to go have breakfast with some friends. There is nothing I like more than really good baked goods. There was an amazing little place I used to frequent in L.A. called La Brea Bakery. I didn’t know this at the time, but the baker there was Nancy Silverton, both she and her then husband Mark Peel are legends in the culinary world. Her little bakery carried the most amazing artisan baked goods and I stopped by daily to see what wonderful things I could be seduced into buying. The first time I tried a Starbucks Frappuccino was at a hotel I worked for. Starbucks had just opened a retail outlet that was situated right inside the hotel. On opening day I remember walking out smiling triumphantly as I took that first, very long, cold sip. The strong, syrup sweetened coffee, blended with ice and topped off with whipped cream and caramel. What was not to like. Back in those days I had no interest whatsoever in knowing, or for that matter caring, what they were made up of. Tart and Tangy Key Lime Curd – Low Carb (2 Grams) Gluten-Free

A Key Lime is such a little power house of mouth puckering tang. I love them along with Meyer’s Lemons for all their tartness which I happen to be very fond of. This penchant for tart and tangy comes from my love of Sour Patch Kids candy. When Sour Patch Kids candy made its debut it was a match made in heaven. That bitingly sour tang followed by sweet.
