Creamy Swedish Meatballs (4 Net Grams)

The first time I ever had Swedish Meatballs was way back when I was a very young single guy living in the big city. It was something made for quick and easy preparation by the folks down at Stouffer. I have always liked Stouffer’s products because quite frankly they were always consistent and more importantly pretty darn good. All you needed was a microwave oven and you were good to go. Autumn has always been my favorite time of year. Namely because of all the holiday treats one has to look forward to as summertime melts seamlessly into autumn. One favorite that instantly came to mind was Libby’s Pumpkin Roll. It has been a holiday staple of my mother’s for decades. These pumpkin coconut muffins came to be because I was challenged by a friend to come up with something that used pumpkin in it. This is a deliciously different take on the Libby’s pumpkin roll recipe that is equally as good and one thats loaded with pumpkin pie flavor. Continue Reading

Pumpkin Mascarpone Mousse (2 Net Grams)

The Pumpkin Challenge. I was recently contacted by a good friend who also observes a low carb lifestyle. Her request or rather her challenge was to create something with pumpkin in it. There were no specific parameters given, just make it  something simple that would get her through the quickly approaching holiday season. This was created as an optional frosting for a soon to follow pumpkin coconut muffin recipe. The really good news though, is that it doubles as a dessert option on its own. Continue Reading

Almonds – They do a body good. I love almonds because as a snack they are a nutrient dense power house of goodness. Good for me, good for my body. Studies suggest that a one ounce serving which is about a 1/4 of a cup is loaded with nutrients and are touted for their health benefits. Continue Reading

Thanksgiving ┬áalways elicits visions of green beans casserole dancing inside my head. Nothing was as comforting as a huge helping of this delicious casserole. It’s a holiday dish that most everyone has had at one time or another. Since its introduction it’s still considered a holiday comfort classic. ┬áToday it remains as one of those iconic dishes one sees again and again at holiday gatherings around the country. Gourmet Salted Caramel Sauce (0 Net Grams)

A Caramel Sauce Disappointment. To begin with I wanted a caramel sauce to compliment my Caramel Brownie Mugcake. Previously I had been using Walden Farms Sugar-Free Caramel Sauce. Truth be told though, like so many of their products it is just ho hum. It can be described as having a somewhat runny consistency. The taste is at best satisfactory and somewhat artificial tasting, but with no other alternatives, it temporarily filled the void. Continue Reading

Apple Streusel Muffin (3 Net Grams), Gluten-Free

An Apple, My New Banana. Much like the discovery I made using that single banana I applied this same principle to an apple. An apple by itself, just like a banana is very high in carbs. Again though when you divide that apple over 12 individual servings you have a muffin that comes in at 3 net grams per serving. Yup, that’s what I’m talking about, that’s low carb math done Mike’s way. Continue Reading

Classic Peanut Butter Cookies (1 Net Gram)

Its hard to remember when I first fell in love with peanut butter cookies. What I do recall is that peanut butter cookies have always been among those things I would get excited about when I saw them at local bake sales. Back in those days this was a very popular way to raise funds for various school sponsored clubs and organizations. These bake sales were the ones always setup in front of  supermarkets and discount stores like K-mart. Mike’s Toll House Style Cookies (1 Net Gram)

Image: Mike's Toll House Style Chocolate Chip Cookie

One of my all time favorite recipes to bake has always been Toll House cookies. The thing I remember most about a Toll House cookie is that they are a comfort treat like no other. That melt in your mouth quality invokes the very best memories of a carefree childhood. Here I was once again, taunted by the challenge to recreate a gluten-free version that mimicked that cookie I grew up with as a child.  Continue Reading
