Creamy Swedish Meatballs (4 Net Grams)

The first time I ever had Swedish Meatballs was way back when I was a very young single guy living in the big city. It was something made for quick and easy preparation by the folks down at Stouffer. I have always liked Stouffer’s products because quite frankly they were always consistent and more importantly pretty darn good. All you needed was a microwave oven and you were good to go. Best Ever Chicken Scallopini (3 Net Grams)

Image: Chicken Scallopini

I have been making Chicken Scallopini for as long as I can remember. Some of you may well wonder what the heck is Chicken Scallopini? It’s just a fancy name for chicken cutlets that are usually pounded out very thin so that they cook very quickly. It is Italian in origin and is traditionally served with pasta. I serve it with a salad or with a vegetable on the side and truth be told, I don’t miss the pasta at all. Continue Reading

Pumpkin Mascarpone Mousse (2 Net Grams)

The Pumpkin Challenge. I was recently contacted by a good friend who also observes a low carb lifestyle. Her request or rather her challenge was to create something with pumpkin in it. There were no specific parameters given, just make it  something simple that would get her through the quickly approaching holiday season. This was created as an optional frosting for a soon to follow pumpkin coconut muffin recipe. The really good news though, is that it doubles as a dessert option on its own. Continue Reading

Dijon Mustard and Tarragon Cream Sauce (1 Net Gram)

Image: Grilled Chicken with Dijon Mustard and Tarragon Cream Sauce.

Dijon mustard is one of those condiments I have always had on hand, but never knew what to do with. This is a classic addition in many French inspired dishes. Here it provides that game changing element of complexity and surprise I have come to rely on to elevate the flavor profile of a sauce or salad dressing. Continue Reading

Gourmet Salted Caramel Sauce (0 Net Grams)

A Caramel Sauce Disappointment. To begin with I wanted a caramel sauce to compliment my Caramel Brownie Mugcake. Previously I had been using Walden Farms Sugar-Free Caramel Sauce. Truth be told though, like so many of their products it is just ho hum. It can be described as having a somewhat runny consistency. The taste is at best satisfactory and somewhat artificial tasting, but with no other alternatives, it temporarily filled the void. Continue Reading

Tiramisu Cupcakes (3 Net Grams), Gluten-Free

Tiramisu Blues. There was a time when I wore blinders and surpassed the bakery section of Whole Foods. Why? Because they have a Tiramisu that was my go to dessert for years. I stopped that urge to indulge in its tracks by coming up with an easy Tiramisu mousse recipe. The mousse by itself has all those delicious flavors I was looking to quash that craving for good! The problem though, was that I still missed those espresso/marsala soaked lady fingers that are an integral component of this classic dessert. Continue Reading

Caramel Brownie Mug Cake – (3 Net Grams), Gluten-Free

Image: Caramel Brownie Mug Cake

There was always an inkling of curiosity whenever I saw a recipe posted for a mug cake. I was down right resistant to trying one of these one cup wonders simply because they are cooked in a microwave. That anything cooked in a microwave could be this decadently rich and delicious was just not something I could not be persuaded to believe was possible. One afternoon though, I read a post that said if you didn’t try one of these quick and easy marvels, you were missing out. That statement finally got me curious enough to want to try one. Easiest Ever Tiramisu Mousse – Low Carb (2 Net Grams) Gluten-Free

The first time I indulged in that wonderful little dessert known as Tiramisu was at a little cafe in Rome. I savored every delicious bite as I sipped on an espresso laced with lemon peel quietly taking in all the hustle and bustle that is Rome. It was love at first bite. The creamy marscapone, the marsala wine and espresso soaked lady fingers covered with all that chocolate dust. It just sent my head into a tail spin. This was my dessert destination everyday for the duration of my stay in that glorious city. Continue Reading

Chocolate Chip Cupcakes with Coconut-Cream Frosting – Low Carb (5 Net Grams), Gluten-Free

Image: Chocolate Chip Cupcakes with Coconut Cream Frosting

A close friend said that these chocolate chip wonders which I referred to as muffins, are more of a cupcake. Why? Because I frosted them. All I know is that they are moist, delicious and loaded with goodness you’re going to love. In the base I use a combination of almond and coconut flours, as well as unsweetened flaked coconut which gives these goodies a texture very similar to one made with gluten. Getting something that resembles and tastes just as good as gluten is not an easy task. Often times  it requires trial and error and these were no exception. I’m a tough customer, so for me to post a recipe it has to be absolutely perfect and I think these are just that. Continue Reading

Avocado What? The idea that you could use an avocado for more than guacamole, as a garnish for salads or as a condiment for burgers came as a quite a surprise. I first learned about chocolate avocado mousse from a friend of mine. She had been making this for years and assured me that it was down right delicious. Now I am always willing to try something at least once so I set about the task of making this odd curiosity. Continue Reading
