Gourmet Salted Caramel Sauce (0 Net Grams)

Image: Salted Caramel Sauce

A Caramel Sauce Disappointment. To begin with I wanted a caramel sauce to compliment my Caramel Brownie Mugcake. Previously I had been using Walden Farms Sugar-Free Caramel Sauce. Truth be told though, like so many of their products it is just ho hum. It can be described as having a somewhat runny consistency. The taste is at best satisfactory and somewhat artificial tasting, but with no other alternatives, it temporarily filled the void. Continue Reading

Tiramisu Cupcakes (3 Net Grams), Gluten-Free

Tiramisu Blues. There was a time when I wore blinders and surpassed the bakery section of Whole Foods. Why? Because they have a Tiramisu that was my go to dessert for years. I stopped that urge to indulge in its tracks by coming up with an easy Tiramisu mousse recipe. The mousse by itself has all those delicious flavors I was looking to quash that craving for good! The problem though, was that I still missed those espresso/marsala soaked lady fingers that are an integral component of this classic dessert. Continue Reading

Apple Streusel Muffin (3 Net Grams), Gluten-Free

An Apple, My New Banana. Much like the discovery I made using that single banana I applied this same principle to an apple. An apple by itself, just like a banana is very high in carbs. Again though when you divide that apple over 12 individual servings you have a muffin that comes in at 3 net grams per serving. Yup, that’s what I’m talking about, that’s low carb math done Mike’s way. Continue Reading

Classic Peanut Butter Cookies (1 Net Gram)

Image: Peanut Butter Cookies and Milk

Its hard to remember when I first fell in love with peanut butter cookies. What I do recall is that peanut butter cookies have always been among those things I would get excited about when I saw them at local bake sales. Back in those days this was a very popular way to raise funds for various school sponsored clubs and organizations. These bake sales were the ones always setup in front of  supermarkets and discount stores like K-mart. Mike’s Toll House Style Cookies (1 Net Gram)

Image: Mike's Toll House Style Chocolate Chip Cookie

One of my all time favorite recipes to bake has always been Toll House cookies. The thing I remember most about a Toll House cookie is that they are a comfort treat like no other. That melt in your mouth quality invokes the very best memories of a carefree childhood. Here I was once again, taunted by the challenge to recreate a gluten-free version that mimicked that cookie I grew up with as a child.  Continue Reading

Blueberry Coconut Muffins (3 Net Grams), Gluten-Free

Blue About Blueberry. I was standing in line at Starbucks to get myself a tall, dark roast red eye. I glanced over at the display case and eyed a fairly large blueberry muffin that was sitting there beckoning to me. Memories of La Brea Bakery came flooding back. La Brea Bakery is that wonderful bakery from my Los Angeles days. This was the home of Nancy Silverton. Her artisan bakery in days past was second to none. My daily sojourn there always ended with me being seduced by one of her daily offerings. Continue Reading

Salted Almond and Coconut Clusters (3 Net Grams)

Image: Salted Almond Coconut Clusters

I came up with these salted almond coconut clusters as another delicious option where I put Lily’s chocolate to the test. It is no secret that I love my sweets. My sweet tooth ruled my life for decades. Creating wonderfully nutritious, as well as delicious treats has become somewhat of a hobby. Part necessity, part challenge and ultimately what keeps me motivated, on track and satisfied. Continue Reading

Chocolate Chip Cupcakes with Coconut-Cream Frosting – Low Carb (5 Net Grams), Gluten-Free

Image: Chocolate Chip Cupcakes with Coconut Cream Frosting

A close friend said¬†that these chocolate chip wonders which I referred¬†to as muffins, are more of a cupcake. Why? Because I frosted them. All I know is that¬†they are moist, delicious and loaded with goodness you’re going to love.¬†In the base¬†I use a¬†combination of almond and coconut flours, as well as unsweetened flaked coconut which gives these goodies¬†a texture very similar to one made with gluten. Getting something that resembles and tastes just as good as¬†gluten is not an easy task. Often times ¬†it¬†requires trial and error and these were no exception. I’m a tough customer, so for me to post¬†a recipe it has¬†to be absolutely perfect and I think these are just that. Continue Reading

Cream of Green Chile Chicken Chowder – Low Carb (6 Net Grams), Gluten-Free

Image: Cream of Green Chile Chicken Chowder

Here in New Mexico we take our green chile seriously. Every year as autumn approaches the smell of green chile being roasted wafts through the air. Every grocer or farmers market offers to fire roast your purchase to blistered perfection before you take it home to store for the winter. As a kid we had chile, mostly red, with every meal. Green chile was something that was only prepared occasionally and something to look forward to when you smelled it cooking on the stove. For me this soup is the very definition of good old fashioned New Mexico comfort food. Continue Reading
