I have been making Chicken Scallopini for as long as I can remember. Some of you may well wonder what the heck is Chicken Scallopini? It’s just a fancy name for chicken cutlets that are usually pounded out very thin so that they cook very quickly. It is Italian in origin and is traditionally served with pasta. I serve it with a salad or with a vegetable on the side and truth be told, I don’t miss the pasta at all.

Chicken Scallopini is a perfect low carb option. It showcase just how wonderfully delicious living low carb living can be.  Please do keep in mind though that this dish is by no means a low calorie meal, so adhere to the portion sizes. You still have to create a caloric deficit if you want to continue losing on your low carb journey. Just so you know though, it is options like this that continue to keep me on track, supremely satisfied and motivated.

Instructions
  1. Get your chicken breasts and separate them into (4) 3 ounce portions. You can if you feel it's necessary, pound them out to a uniform thickness. I choose to skip this step and do not find that this is necessary.
  2. Heat the olive oil in a large skillet over medium heat. Fry chicken breasts until golden brown. Remove to a plate and set them aside.
  3. Add the butter to the pan and caramelize the mushrooms over medium heat. When the mushrooms are nicely browned add the lemon juice to deglaze the pan and cook down just a bit. thickness you like for your sauce.
  4. Add in the vermouth, heavy cream, lemon zest, and capers and let the cream come to a simmer. Season with salt and plenty of black pepper. This is also the time to add back in your chicken. At this point the sauce is going to be very loose. Heavy cream has to simmer for a few minutes so give it time and it will start to reduce and thicken into a nice thick sauce. Continue to simmer until you achieve the desired thickness you like for your sauce.
  5. Plate your chicken and top off with plenty of the sauce. If you choose to, garnish with some chopped Italian parsley. Then serve it along side your favorite vegetable, salad or both. Now sit back and get ready to enjoy!
