Best Ever Chicken Scallopini
This Chicken Scallopini is a game changer. What makes it a game changer is I amp up the flavor profile of the lemon.   1. Get your chicken breasts and separate them into (4) 3 ounce portions. You can if you feel it’s necessary, pound them out to a uniform thickness. I choose to skip this step and do not find that this is necessary.
  2. Heat the olive oil in a large skillet over medium heat. Fry chicken breasts until golden brown. Remove to a plate and set them aside.
  3. Add the butter to the pan and caramelize the mushrooms over medium heat. When the mushrooms are nicely browned add the lemon juice to deglaze the pan and cook down just a bit. thickness you like for your sauce.
  4. Add in the vermouth, heavy cream, lemon zest, and capers and let the cream come to a simmer. Season with salt and plenty of black pepper. This is also the time to add back in your chicken. At this point the sauce is going to be very loose. Heavy cream has to simmer for a few minutes so give it time and it will start to reduce and thicken into a nice thick sauce. Continue to simmer until you achieve the desired thickness you like for your sauce.
  5. Plate your chicken and top off with plenty of the sauce. If you choose to, garnish with some chopped Italian parsley. Then serve it along side your favorite vegetable, salad or both. Now sit back and get ready to enjoy!
