That Odd Curiosity – The Mug Cake

There was always an inkling of curiosity whenever I saw a recipe posted for a¬†mug cake. However, I was down right¬†resistant to trying one of these one cup wonders simply¬†because they are¬†cooked in a¬†microwave. ¬†That anything cooked in a microwave could be this decadently rich and delicious¬†was just not something I could be persuaded to¬†believe was ¬†possible.¬†¬†One afternoon though, I read a post that said if I didn’t try one of these quick and easy marvels, I would be missing out. That statement finally got me curious enough to want to try one.

A Mug Cake Reinterpreted

I had been craving something chocolatety and wanted something quick and easy that would satisfy my always present sweet tooth. I already knew that a Lily’s chocolate bar was not going to cut it. What to do, what to do? I finally relented and decided to try the recipe that I had seen¬†posted and upon trying it had to admit that it wasn’t half bad. ¬†And although it wasn’t bad, it still needed something that would elevate it to WOW status! This is the result of what I came up with.

To amp up the flavor of the chocolate¬†I added instant espresso powder and sea salt flakes. For those of you who are not familiar with baking or candy making these are two ingredients¬†professionals use to¬†elevate the flavor profile of the chocolate. I also added walnuts to give¬†this more of a¬†brownie like texture. From there I¬†opted to top it off with Walden Farms Caramel Dip. I did this¬†so it would taste more like a¬†turtle brownie. Something that I had been missing dearly and had been craving for quite some time. I then topped the whole thing off with a little stevia sweetened whipped cream and Voila! A¬†dessert that’s ready to eat in under 5 minutes. How cool is that!

Instructions
  1. Mix all the ingredients in a bowl. Be sure to throughly mix the ingredients.
  2. GREASE WHATEVER BOWL OR MUG YOU WILL USE. I use a coconut oil spray. Make sure the bowl or mug you use is deep enough so that your cake doesn't make a mess in your microwave. I made this mistake.
  3. Microwave for 1:30-2:00 minutes. The former for lava, the latter for cakey. Serve with or w/o the sugar free caramel sauce and freshly whipped cream sweetened with a little Stevia.
  4. Now it's time to sit down and enjoy this delicious cup of joy!

Recipe Notes

*Since I opted to include the Walden Farms Caramel Dip and the Stevia sweetened whipped cream I didn't want to sweeten the chocolate too much. If you decide not to use these optionals, you can add up to an additional Tbls of the Pyure to sweeten the mug cake to your liking.
