Pumpkin Mascarpone Mousse

The Pumpkin Challenge

I was recently contacted by a good friend who also observes a low carb lifestyle. Her request or rather her challenge to me was to create something with pumpkin in it. There were no specific parameters given, just make it  something simple that would get her through the quickly approaching holiday season. This was created as an optional frosting for a soon to follow pumpkin coconut muffin recipe.

Autumn has always been my favorite time of year. Namely because of all the holiday treats one has to look forward to as summertime melds seamlessly into autumn. One favorite that instantly comes to mind is Libby’s Pumpkin Roll. It has been a holiday staple of my mother’s for decades.

The cream cheese filling was the inspiration for this sensational mousse. The mousse is great all by itself, but also lends itself as an option in creating other delicious dessert options as well. I don’t know about you, but that’s something I can surely appreciate as the holiday season comes in to play.

A Multi-Duty Pumpkin Mousse

Part of the appeal of that dang delicious pumpkin roll is it’s cream cheese filling. This is my own unique interpretation of that classic filling and it does double duty as a dessert option all on it’s own. Whether you choose to frost and fill your muffins with it, make mini pumpkin tartlets, or serve it as this decadently sublime mousse, prepare to be delighted with its silky texture and all that delicious pumpkin pie flavor I incorporated to embrace the holiday season ahead.

As my go to base for the mousse I use Mascarpone. As an alternative option though, feel free to substitute regular cream cheese. It will increase the meta data, but I now realize that Mascarpone is not as readily available as cream cheese is, therefore I am also including the meta data for that substitution.

Do not skip the addition of the dry milk. This is what stabilizes the mousse so that it holds on to all that whipped fluff you just whipped in. It keeps the mousse sitting pretty in and out to the refrigerator in whatever capacity you choose to use it. From my kitchen to yours, happy low carbing. Mike

Instructions
  1. Chill a metal mixing bowl in the freezer for 10 minutes
  2. When your bowl is ready place all your ingredients into the mixing bowl. With a hand mixer slowly begin to whip your ingredients together increasing the mixer speed gradually until you are whipping at the hand mixer's highest setting. Whip until very stiff peaks are achieved.
  3. Spoon your mousse into a pastry bag with your choice of tip and pipe about 2/3 of cup into individual ramekins or serving dishes. Dust each mousse with pumpkin pie spice and top with chopped pecans. Serve immediately or chill until ready to serve.
