Green Beans Almondine
I made this dish my own by elevating the flavor profile of the lemon by adding lemon zest. That additional zing is what makes this almondine sing and rise a notch above the rest. What I like best though is that its quick and easy to make and not something you have to reserve making for the holidays anymore.

  1. Fill a 2 quart saucepan a little over half ways with water and set over medium heat. Let it come to a rolling boil.
  2. While you are waiting for the water to boil clean off the stringy end of your green beans. When the water is ready add the beans, cover and then set the timer for 10 minutes to cook.
  3. While the beans are cooking place the butter in a skillet and place over medium heat to melt. Add the almonds and stir till the almonds start turning a golden brown. Remove them from the heat and add the lemon juice and zest.
  4. When the beans are done drain them and add them to the skillet and toss in the butter mixture till they are glistening. Put the dressed beans on a serving plater and top with the almonds. Sprinkle a liberal amount of sea salt flakes over the beans to your own preference before serving.
