Parmesan Cheese Crisps
Parmesan crisps are my go to snack when I want something quick, easy and savory. One of the things I missed when I gave up gluten were crackers. Nabisco products had always managed to make their way into my basket when I was out shopping. These are a low carb dieters dream as they make a suitable and satisfying substitute for those high carb crackers. Now don’t get me wrong, because there are a lot of gluten-free options available. On the downside though, they are not low carb.
One day on a big box shopping trip I saw a bag of parmesan crisps and remembered how crispy and cracker like they are. I was very familiar with this old restaurant classic because it’s used a lot as a garnish for Caesar salads. What I couldn’t believe was the price for that not so big bag. That’s when the light bulb went off in my head.
Making Parmesan Crisps vs Buying Them
I put the parmesan crisps back and walked over to the refrigerated section where they keep the cheese. I picked up a large container of grated Parmigiano Reggiano which I knew is one of those food items we love that has 0 carbs. Yup you read that right, zip, zilch, nada. I walked toward the check out with a smug smile on my face. I was going to make those crispy, savory cheese crisps at home for half the cost. Just goes to show you that you never know where opportunities to expand your low carb options are going to come from.
