Parmesan crisps are my go to snack when I want something quick, easy and savory. One of the things I missed when I gave up gluten were crackers. Nabisco products had always managed to make¬†their way into my basket when I was out shopping. These are a low carb dieters dream as they make a suitable and satisfying substitute for those high carb crackers. Now don’t get me wrong, because there¬†are¬†a lot of gluten-free options¬†available. ¬†On the downside though, they are not low carb.

One day on a big box¬†shopping trip I saw a bag of parmesan crisps and remembered how crispy and¬†cracker like they are. I was very familiar with this old restaurant classic because it’s used a lot as a¬†garnish for Caesar salads. What I couldn’t believe was the price for that not so big bag. That’s when the light bulb went off in my head.

Making Parmesan Crisps vs Buying Them

I put the parmesan crisps back and walked over to the refrigerated section where they keep the cheese. I picked up a large container of grated Parmigiano Reggiano which I knew is one of those food items we love that has 0 carbs. Yup you read that right, zip, zilch, nada. I walked toward the check out with a smug smile on my face. I was going to make those crispy, savory cheese crisps at home for half the cost. Just goes to show you that you never know where opportunities to expand your low carb options are going to come from.

I’m sure your going to enjoy¬†making a batch of these bad boys up. They are so quick and easy to make that you’ll never think about buying them again. Crispy, savory and oh so delicious. From my kitchen to yours, enjoy.

Instructions
  1. Preheat the oven to 350F
  2. Measure out your cheese into a small bowl and add the pepper and rosemary. Mix to incorporate the spices evenly.
  3. Use a measuring spoon to get 6-8 mounds onto a baking sheet lined with parchment paper or use a silpat baking mat. Spread the mounds out. This is how you get those nice lace like rounds.
  4. Bake for 8-10 minutes or until their nicely golden brown and sizzling. Allow to cool for about 5 minutes. Then while they're still warm use a metal spatula to get them up and onto a paper towel to drain off some of the oil from the cheese. Wait a few more minutes and then enjoy.
Recipe Notes

*Don't limit yourself with my selection of spices. I happen to like rosemary and freshly cracked pepper, you don't have to put any spices at all. They are really good all on their own.
