Sweet & Savory Broccoli Slaw Served with BBQ Chicken

Bountiful Broccoli.

Recently I was out grocery shopping for vegetables when I happened upon a package of broccoli slaw. I was curious and picked up the package. I am not one who has ever been a fan of cooked broccoli, but oddly enough I love it raw. The slivers of broccoli looked very similar to regular cole slaw. After some careful thought on how I could use it, I decided to give it a try.

Broccoli is always one of those vegetables you see year round. It frequently makes an appearance on vegetable platters along side other raw veggies and is often times served with ranch dip. It has a taste and crunch that I find refreshingly satisfying. My thinking was that this would make a great summertime salad. Especially welcome for those times when that blazing hot summer heat drives us out of the kitchen. I began toying around with the idea of doing something sweet and savory. There is nothing I enjoy more than that perfect balance of salty and sweet.

 A Savory Side for 0ur Way of Eating.

What makes this salad so great is that it has plenty of the good fat we need for our way of eating. The mayonnaise, sour cream and avocado provides all that necessary fat. You also get some additional fat from the bacon which I added as the savory element, but also added in order to boost the protein as well. For me everything just tastes better with bacon. What I like most though is that broccoli has plenty of beneficial fiber and is loaded with nutrients our bodies need to keep our engines running smoothly.

To give this even more texture I also added small florets of broccoli, as well as slivered almonds. I added some red bell pepper, apple cider vinegar and some alternative sweetener to give it its tangy sweetness. This combination of flavors play off of each other in perfect unison and I think you will find this a worthy addition to your summertime lineup. From my kitchen to yours, happy low carbing. Instructions
  1. In a large bowl open and empty the package of cabbage slaw.
  2. Trim and cut up the broccoli florets into bite size pieces and add to the slaw mix.
  3. Pulse chop the bacon into bacon bit size pieces and add to the slaw mix.
  4. Pulse chop the red bell pepper into a finely chopped dice and add to the slaw mix.
  5. In a small bowl add the mayonnaise, sour cream, dijon mustard, apple cider vinegar and the sugar alternative and mix the dressing thoroughly.
  6. Add the dressing to your slaw mix and toss to distribute the dressing evenly and season well with freshly cracked black pepper. Cover and put in the refrigerator to chill for a minimum of two hours or make one day in advance and chill over night.
  7. When your salad is chilled serve it along side your favorite BBQ'd meat.
