Sweetly Spicy Almonds
These sweetly spicy almonds are a quick and easy thing to make for your low carb arsenal. They will be much appreciated and especially welcome when you reach that ready to chew on some cardboard stage of hunger and dinner time is still an hour or more away.

  1. Preheat your oven to 350°
  2. Place your almonds on a cookie sheet lined with parchment paper or a silpat. Roast in the oven for 11-12 minutes. Don’t go beyond that or the almonds will burn.
  3. In a large zip lock baggie combine the brown sugar, cayenne and salt. Close the bag and shake a few times to distribute the spice and sugar mix evenly.
  4. While the almonds are roasting put the fiber syrup, water and coconut oil in a large sauce pan and stir to combine.
  5. When the almonds are done let them sit for a minute and dump them all at once into your sauce pan and turn the heat on to medium and begin to stir your almonds. The mixture is going to heat up quickly and start bubbling, so just keep stirring until there is no liquid left in the bottom of the pan and the almonds are glistening evenly. Pull them off the heat.
  6. With a large spoon scoop the almonds into your zip lock baggie. When all the almonds are in the bag, seal the bag and shake vigorously to distribute the sugar evenly around the almonds. Leave them in the bag and freeze them. This will make it really easy to break them apart and portion them out later on.
  7. Now all that’s left to do is enjoy them!
