My childhood in New Mexico is filled with memories of waking up to smell of coffee brewing and fresh flour tortillas cooking on the stove top at my grandmothers house. One of my favorite things to eat that she constantly prepared were papitas. This is a very humble dish made by slow cooking finely diced potatoes, bacon and a little yellow onion. It is more commonly known to other folks as a potato hash. Pure down home comfort food. Nothing fancy, or expensive, but oh so filling and absolutely delicious. Continue Reading
